The sound of charcoal crackling, flames flaring up to meet the dripping fat, the sweet smoky smell of sticky ribs on the grill. It was enough to make us salivate. Three ribs please!
We're in Bali, well Ubud to be specific. After a week in Makassar, we flew to Bali to continue our run of great food and great weather. We had some really great meals -- the villa we stayed in served us amazing complimentary breakfasts every morning -- but the first blog-worthy one was our dinner at Naughty Nuri's.
Our order of three Flintstonian pork ribs came quickly. Between the two of us, we demolished the sweet peppery tender ribs, two plates of warm steamed rice and ice-cold coronas in no time at all. The trick with these ribs -- which I didn't employ on my prior visits -- is to make use of the wedge of lime that came with the dish. They can be heavy handed with the sweet sticky BBQ basting sauce, a squeeze of lime juice cuts through that richness.
One teeny tiny last tip, stick with the rice as your main carbs, as opposed to chips. We're in Indonesia, rice is what they do best.

I was also pleased with the service that night, everything came quickly without a hitch. Perhaps because it was early dinner and it wasn't mad busy, either way it was a pleasant evening for us all around.
